It’s been a chilly winter in the Northeast. When it’s cold outside, I crave comfort foods. And pie for dinner says comfort food to me!
So when Foodie.com asked me if I wanted to put together a collection of pies in celebration of Pi Day on March 14th, I jumped at the chance. I’m not really a “pie for dessert” person, so there was no question in my mind I was going to put together a savory collection of pies for dinner. I’m always looking for new recipes. I love to cook, but I often fall back on my old standbys.
When I was going through recipes, I tried to include a few that were easy. My kids are teenagers, and our weeknights are often spent on the run with all of their sports practices. Having a few recipes I can put together quickly makes those busy nights run a little more smoothly. But I do get a lot of joy out of cooking, so I don’t want or need for everything to be easy. Basically the criteria for my collection was the recipe had to look and sound delicious. Everyone in this family loves to eat!
