When Foodie.com asked me if I wanted to put together a collection of Sunday Suppers, of course I agreed! It didn’t take me long to decide to go with a sandwich theme.
With our kids’ sports schedules, Sunday is probably the one day of the week that all five of us consistently eat dinner together, thanks to three kids with completely different sports schedules. Usually it’s two or three of us eating together. Sundays are also pretty hectic with games, so I like to have some easy dinner ideas at my disposal…that way we can spend more time together and get organized for the upcoming week.
Plus, we love paninis and other gourmet sandwiches here…no “plain jane” sandwiches for us. But I do sometimes get stuck in a rut with my cooking, and I forget to try new things. I kept that in mind when I was building my sandwich collection and picked sandwiches I knew my family would enjoy.
I know I’ll be making all of these over the course of the spring. There’s a couple meatless options in here as well…the Spinach Artichoke Grilled Cheese looks amazing, and my daughter and I both love roasted peppers, so we can’t wait to try the Roasted Red Pepper Panini with Cilantro-Lime Mayo! But every single one of these looks absolutely delicious!
Tonight I decided to make the Teriyaki Sliders from the House of Yumm. It’s a damp rainy day here, and just looking at them makes me feel like I should be eating them among the palm trees…a girl can dream, can’t she? My husband and the kids all loved them, although my oldest took the pineapple off because “pineapple doesn’t go with meat.” *Shaking my head* He definitely missed out!
Now to decide which to make next Sunday!
