I love the carefree days of summer, hanging out by the pool, barbeques, and of course the much needed girls’ night in!

For the past nine years, I’ve been going out for dinner with the same group of friends for our birthdays. I honestly don’t even remember how we all met, but our friendship has endured the test of time. With our busy schedules, none of us really see each other on a day to day basis, so our get togethers are all about catching up.  I do love our nights out, but in the summertime, our pool is the perfect place for friends to gather, so we’ll be planning a girls’ night in!

And when it’s hot outside, what’s better than refreshing summer drinks or chilly treats to cool you down?

One of my new favorite summer drinks is the Trop50 Raspberry Acai. Trop50 Raspberry Acai has 50% less sugar and calories and no artificial sweeteners! It really is the perfect amount of sweetness, and so refreshing at the same time. It’s wonderful by itself, but it’s also great in smoothies and lots of other drinks. Check out the recipes in the collection featured above. I’m not sure which one I want to try first…they all look so good!

I was experimenting with Trop50 Raspberry Acai just the other day myself and decided to try making a granita.

Granitas are really easy to make. Basically all you have to do is blend a mixture of fruit and liquids together, place it on a cookie sheet with sides or a glass casserole dish, and then stir and scrape the mixture with a fork as the crystals are forming. After about 3 hours or so (I left mine overnight), it should be ready to go.

I would have taken pictures of the process, but I was making the granita in the evening, and the lighting was not good. But believe me, you can’t mess it up.

Raspberry Acai Granita with #Trop50...delicious frozen treat for hot summer days and nights!

Rasberry Acai Granita

Yield: 4
Prep Time: 10 minutes
Cook Time: 3 hours
Total Time: 3 hours 10 minutes

Granitas are an easy summer treat for when it's hot outside!

Ingredients

  • 6 oz package of raspberries
  • 1 cup Trop50 Raspberry Acai
  • 2 cups ginger ale

Instructions

  1. Blend together all ingredients in blender until smooth.
  2. Pour into rectangular glass container or cookie sheet with sides and place in the freezer. (I didn't bother covering it.)
  3. After about a half hour, stir the mixture with a fork to break up the crystals that are forming, and continue this process for the next few hours.
  4. If you are not eating right away, put your granita in a freezer safe container.

Wow! These look so yummy and perfect for summer! I made mojitos the other day and they were a seriously suitable way to get into the summer spirit (no pun intended). I have got to try this, maybe with a shot or two of vodka for a little kick!

Oh I love acai berries but haven't had them in awhile! I've never tried making granitas before, but I have a feeling they'd be perfect for hanging out with my sister on luscious summer evenings :)
