Cannellini Bean and Parsley Hummus...a delicious and healthy gluten free and vegan appetizer

 

It’s probably obvious I have a thing for hummus at this point. I’m always trying new combinations.

But it’s not just me with a thing for hummus here. My kids like it too. I’d much rather have them snacking on hummus than junk food. My daughter actually takes hummus and cut up veggies as part of her lunch every day.

Funny story…years ago, my oldest son had an ethnic day at school (I think he might have been in second grade), and each kid was supposed to bring in a favorite dish from their heritage. My son wanted to bring hummus. Not one of the kids would try it. The only people that ate it were my son and his teacher. It didn’t really phase him…he was just surprised because it was one of his favorite Lebanese foods. I guess we should have gone with the Italian side of the family…

At any rate, you get the picture here…hummus is just one of those appetizers that we really like. It’s so versatile too. Ever had a roasted vegetable sandwich with hummus on it? Delicious! I also like to make kibbe sandwiches and add hummus to it…the traditional hummus though. Kibbe is another Lebanese dish, unfortunately one I am still mastering. Oh, I can make it…but it doesn’t taste like Aunt Gee’s. Aunt Gee’s kibbe is widely regarded as the best around our family! If I ever get it close, I’ll share the recipe.

But I digress…

You might have noticed that I often leave the tahini out of my hummus recipes. It’s not that I don’t like tahini, because I do. But sometimes I feel like it really doesn’t need it. And tahini isn’t something that most of us just keep in the house. I do, but that’s because I married a man who is half Lebanese, and it’s kind of a staple for Lebanese people. But I don’t think you’ll miss it in the recipes where I haven’t included it.

Cannellini Bean and Parsley Hummus, a delicious gluten free and vegan appetizer

Cannellini Bean and Parsley Hummus

Prep Time: 15 minutes
Total Time: 15 minutes

Ingredients

  • 2 15.5-oz cans of cannellini beans
  • 1/2 cup parsley, plus a tiny bit more for garnish
  • 1 small clove of garlic, crushed
  • Juice from 2 lemons, plus a little lemon zest from one of the lemons
  • 6 tablespoons water
  • 2 tablespoons olive oil

Instructions

  1. Add all ingredients to blender or cuisinart, puree until smooth.
  2. Add additional parsley for garnish.

We are HUGE hummus fans at my house, all 3 kiddos and both adults :). I love making my own hummus, but have not tried it yet with white beans, can't wait to try this! I agree with you about the tahini ☺️

I love Hummus!! We never made our own though... but this is motivating me to do so! I love eating it with roasted meat... not sure if that's a thing, but I love it! Absolutely love it Michelle! So glad I saw this on FoodieFridays! :)

I've never made my own, but I'm a huge hummus fan, and it it almost daily. I had no idea it was so easy to make! Pinning!
