Today I’m doing something a little different! My friend Michaela from An Affair from the Heart organized a recipe swap among a group of food bloggers. We each had a different blog and got to pick a recipe to try and share with you. So we’re all spending the day in another’s shoes…Freaky Friday, so to speak! I had Justine and Flannery of the Full Belly Sisters. They won’t know I had them until this post goes live! How’s that for fun?!

This was actually my very first introduction to their blog, but I was thrilled to get them. They blog about women’s health, and their recipes all have their roots in nutrition and wellness.  While I can’t say I always use nutritious ingredients, for the most part I do cook healthy, and real food ingredients are important to me. I found quite a few recipes on their site that I wanted to try. You can check them out in the links I shared. 

Roasted Cauliflower

I chose to make their roasted cauliflower recipe, which they called Cauliflower Popcorn. My kids all like cauliflower, thanks to my late father in law, because he had a special way of cooking it that we all loved. I’ll have to get that recipe up on the blog at some point. 

But now I have another favorite recipe. My husband told me after dinner he loved the roasted cauliflower!

I actually doubled the recipe because Justine made the comment that her husband and son didn’t get to try the recipe because she ate the whole head of cauliflower by herself. I knew this roasted cauliflower was going to be a big hit, because I’ve roasted other vegetables, and my family likes them cooked this way.  And I was right.  Those two heads of roasted cauliflower were finished by three people…BIG SCORE!  Two of my kids weren’t even home for dinner tonight, but I know they are going to like it too.  

So are you starting to wonder what this recipe has in it that makes it SO GOOD that you could actually eat a whole head of cauliflower by yourself?! 

The key is simply in how you cook it. It’s super simple to make, but the caramelizing that takes place during the roasting process makes it seriously yummy!

Cauliflower Popcorn - Roasted Cauliflower

Yield: 4
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes

Ingredients

  • 1 head of cauliflower
  • 3 tablespoons extra virgin olive oil
  • 1/2 - 1 teaspoon salt, or to taste
  • 3 tablespoons parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425 degrees.
  2. Trim the cauliflower head. You just need the florets...you can save the stems for another use.
  3. Cut the florets into the size of ping pong balls as they will shrink as they are cooking.
  4. Put salt and oil into a bowl and mix, then add your cauliflower florets. I actually usually use a plastic bag for this step.
  5. Toss well to coat the cauliflower.
  6. Line a baking sheet with parchment paper, and spread the cauliflower across.
  7. Roast your cauliflower for an hour, turning every 15 minutes.
  8. The sides will turn brown...it means it is caramelizing!
  9. Toss with grated parmesan if desired, and serve warm

That sounds delicious! I think my husband would even enjoy it. I often buy a whole head of cauliflower and then only end up using a bit of it so this is perfect!
