Today’s recipe is a bit of a change of pace for me.

As you know, we eat pretty healthy here. And I am sure you noticed the Twinkies in the picture. I haven’t had a Twinkie in at least 30  years. My teenagers have never  had one in our house…I’ve never bought them. They could have had them at a friend’s house though.

It’s not like they never eat junk food. But I believe in moderation. As one of our doctors who takes a holistic approach says, “as long as the kids know what is real food and what is not, that’s the important thing.”  So in that respect, I don’t worry so much about every little thing they eat. 

Now you’re probably wondering why I made Minion cupcakes for my teenagers?

I didn’t. I’m not that creative. 

However, my daughter is. We have little cousins visiting from out of town. Every time they are here, she does some sort of baking project with them. They love it!

One time they made these adorable panda cupcakes. I wish I had a picture of the lions they made last time. They were so cute.

But right now they are loving Minions. So Minion cupcakes it was!

My daughter uses this vanilla cupcake recipe from Natasha’s Kitchen. It’s printed out and dog-eared, folded away in one of her cupcake cookbooks. I think she uses this recipe with the kids every time they visit. I know it is her favorite. 

She likes to use buttercream frosting on top.  I forgot to take a picture of that part.

This  Minion cupcake was not like the others…he got his red eyes from red food coloring. I didn’t include it with the recipe, but you could definitely use other food coloring colors to do this, if you want to deviate a little from the “Minion” look.

Minion Cupcakes

Cook Time: 14 minutes

Ingredients

Instructions

  1. Make cupcakes according to recipe directions.
  2. Make buttercream frosting according to package directions. About 12 drops of blue food coloring per 1 cup of frosting will give you a color similar to the color on these minion cupcakes.
  3. Cut Twinkies in half for most of the minion cupcakes; cut a couple longer ones for taller minions.
  4. Use black food coloring to decorate eyes and mouths and stick the Smarties eyes on.
  5. Place minions on top of the frosted cupcakes.
