Mediterranean Quesadilla

Hello there, dear A Dish of Daily Life readers! My name is Tania, and I create delicious and quick recipes at Cooktoria.com. Today, I am happy to share one my husband’s favorite dishes with you. He could eat this Mediterranean Quesadilla for breakfast, lunch and dinner.  And I am always happy to cook it because it only takes 15 minutes from start to finish, and the ingredients are all things most families always have on hand. You probably already have everything you need to make this too. And if you don’t have tortillas yet — that’s ok, they’re sold at the closest grocery store. You should definitely give this recipe a try. The melted cheese married with crunchy bell peppers, mushrooms and olives will surely make your day better!

I first made this Mediterranean Quesadilla about a year ago and I’ve made it so many more times since then! It makes it very convenient to have a quick and healthy lunch/dinner when you come back from work hungry and don’t feel like cooking a more complicated dish. All you need to do is chop some veggies, shred the cheese and toast this beauty for about 2 minutes on each side. It’s that easy!

The choice of cheese in this recipe is yours; however, I recommend picking a type of cheese that melts nicely. Provolone, Mozzarella, Gouda, Cheddar, Gruyere and Monterey Jack will do the job just fine. I also encourage you to try some different topping variations such as tomatoes, roasted peppers, corn, artichokes, ham or pancetta to best suit your taste preferences. I once made it with sun-dried tomatoes and it tasted wonderful! You see how customizable this recipe is? You’ll never get bored with it.

Mediterranean Quesadilla

This 15-minute, healthy vegetarian Mediterranean Quesadilla filled with mushrooms, olives and bell peppers can serve as a quick lunch or a light dinner. Serve it with guacamole or a fresh salad.

Ingredients

  • 4 7-inch flour tortillas
  • 2 1/2 cups shredded cheese (Provolone, Cheddar, or Mozzarella)
  • 1/2 small bell pepper, chopped into small cubes
  • 3 medium-sized mushrooms, chopped into small cubes
  • 8 black olives, chopped
  • Fresh cilantro leaves

Instructions

  1. Layer half of each tortilla with cheese, a quarter of your chopped toppings and some fresh cilantro. Sprinkle some more cheese and fold the tortilla in half.
  2. Fry the quesadillas on medium-high heat on a non-stick frying pan for about 2 minutes on each side until the cheese has melted and the tortillas are crispy. (You will have to work in 2 batches, frying 2 quesadillas at a time, or use 2 frying pans).
  3. Serve with a garden salad or guacamole. Enjoy!

This is a perfect recipe for our new press toaster! Did you add a little butter in the pan before frying those? We often add a little butter on the bread slices when we make grilled cheese, should we do the same with quesadillas?
