Clam Canapés

The summer is prime entertaining time for my husband and I. We have a running joke with our friends that we don’t invite anyone over except in the summer. It’s for the most part true, but mostly because the rest of the year is so hectic for us with our teens’ sport seasons. 

But once summer rolls around, we love to relax by the pool with friends. Cocktails, a few hors d’oeuvres, a rack (or two) of smoked ribs (my husband’s specialty) and great company are a recipe for a perfect evening!

Sometimes I like to draw my inspiration for recipes from the past. When I think of retro party food, my mind immediately goes to canapés.

The beauty of the Clam Canapés recipe I am going to share with you today is its simplicity. Whether your cocktail party is formal or casual, I think most of us would agree we’d rather spend our time with our guests rather than in the kitchen.

Canapés can be built on bread cut into thin slices or crackers, and usually include a spread, possibly another item and a garnish. With my creamy hot Clam Canapés, the spread is made from a cream cheese, clams and green onion mixture, and garnished with paprika. 

I like to serve appetizers that I can make ahead of time or that take minimal prep time the day of the party to keep things as easy and simple as possible. These hot Clam Canapés are both. Making the clam and cream cheese spread only takes minutes, and it’s easy enough to prepare it the night before. The clam spread can be refrigerated until you’re ready to use it. Once the party starts, you can quickly spread a spoonful onto each bread round and broil them for three to five minutes until the cheese has melted. You’ll want to serve them while they’re hot.

Yield: 18
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • 3 oz cream cheese, softened
  • 1 6.5 oz can chopped clams, drained
  • 1/3 cup swiss cheese, shredded
  • 1 tbsp green onion, chopped (including some green parts)
  • 1 tbsp lemon juice
  • dash of Worcestershire sauce
  • dash of paprika for each bread round
  • 18 sliced rounds of french baguette

Instructions

  1. Combine all ingredients except paprika in bowl and mix well.
  2. Spread mixture on top of each slice of bread.
  3. Give each round a dash of paprika.
  4. Broil until cheese melts, approximately 3-5 minutes.
