HOMEMADE NACHOS

For some, game day is about the game, and for others, game day is about the food.

I’m in the latter camp.

Don’t get me wrong. I love a good game as much as the next person. And I enjoy watching sports.

But I LOVE party food.

I could just skip dinner and eat appetizers instead. In fact, we did just that the night I made this yummy tray of nachos. We were watching the Auburn – LSU game from earlier this season. Did you catch that game? My daughter was there at the game, visiting her cousin who goes to Auburn. In the final seconds of the game, LSU scored for the win. And then it was overturned…reversing the score in favor of Auburn. Talk about an emotional last few seconds for the fans on both sides!

Anyway, we had these Homemade Nachos for dinner that night.  They were definitely a hit! And quite honestly, I didn’t feel so bad eating them for dinner, because they were loaded with beans and veggies. Plus they took less than 30 minutes to make!

HOW TO MAKE THE BEST HOMEMADE NACHOS

First preheat your oven to 400 degrees.

Then start browning your ground beef. I like to use organic, but that’s just my preference. Drain the extra fat off; then add two tablespoons of homemade taco seasoning along with 1/3 to 1/2 cup of water. Bring the water to a boil and cook the mixture for about 2 minutes. Then you can set it aside for the nachos.

You can use the taco seasoning packets that you can buy, but making your own is very simple and much healthier. I make myself a batch every so often and store it in an airtight container.

Line your baking sheet with parchment paper to avoid having the cheese stick to the pan, and place your first layer of chips on the parchment paper. Then layer the taco meat, refried beans, black beans, cheese, olives and corn on top of the chips. Repeat the two layers.

Here’s what they’ll look like after one layer. I did add a little bit of that chunky salsa to my layer, but I made sure it was drained really well. The last thing you want is soggy nachos. Probably the best thing to do is just add it to the top after it comes out of the oven.

Just a note on the refried beans…again, I’d encourage you to use homemade. I have a simple refried beans recipe that tastes great, and is healthier than the canned version. It literally takes minutes to make.

After the two layers, top with the chopped green onions, sliced jalapeño, and mixed peppers. Here they are, ready to go in the oven!

Cook your nachos in the oven for about 10 minutes or until the cheese melts. Top with the drained chunky salsa / pico de gallo and chopped avocado when the nachos come out of the oven and serve warm.

You can add a couple dollops of sour cream as well, but my family took over before I could do that.

Homemade Nachos

These Homemade Nachos, loaded with your favorite healthy fixings, are perfect for game day!

Ingredients

  • 1 party size bag of tortilla chips
  • 1 lb hamburger meat
  • 2 tablespoons taco seasoning
  • 1/3 - 1/2 cup water
  • 1 cup refried beans, preferably homemade
  • 1 15.5 oz can black beans, drained and rinsed
  • 2 cups shredded cheese, a mix of Cheddar and Monterey Jack
  • 2 2.25 cans of sliced black olives, drained
  • 1 cup corn, cut straight from the cob, or frozen, thawed
  • 2 cups chunky salsa or pico de gallo, drained of excess liquid
  • 3 green onions, chopped, for garnish
  • jalapeño, mixed yellow, orange, red mini peppers, sliced in rounds for garnish
  • 1 avocado, cut into chunks

Instructions

  1. Preheat oven to 400 degrees.
  2. Brown ground beef; drain excess fat.
  3. Add homemade taco seasoning and water to ground beef. Bring to a boil and cook for two minutes.
  4. Line stoneware baking sheet with parchment paper.
  5. Place first layer of chips on baking sheet.
  6. Layer taco meat, refried beans, black beans, cheese, olives, and corn. You can also add drained pico de gallo if you'd like.
  7. Repeat layer.
  8. Top with chopped green onions, jalapeño, and mixed peppers.
  9. Cook in oven for about 10 minutes or until cheese melts.
  10. Top with salsa/pico de gallo and chopped avocado when the nachos come out of the oven.
  11. Serve warm.
