  2. Cook bacon in skillet until crisp. Remove and drain on paper towels.
  3. Remove all but about 1 1/2 - 2 tablespoons of bacon grease in the pan. Reserve extra bacon grease in case you need a little more, since you'll be browning your chicken in batches.
  4. Dredge chicken thighs in flour
  5. Cook chicken thighs in bacon grease over medium low heat until browned on both sides, about 10 minutes.
  6. While chicken in browning, combine Honey, Dijon mustard, chili powder and apple cider vinegar; mix well.
  7. Transfer browned chicken to baking dish.
  8. Drizzle chicken with honey mustard sauce.
  9. Bake chicken uncovered for approximately 40-45 minutes. Thigh meat looks different than breast meat when cooked (pinkish brown vs white) so test with a meat thermometer to be sure they are cooked all the way through. The thermometer should read 165 degrees F.
  10. Crumble bacon over the top of the chicken and drizzle with sauce before serving.

If you're using regular honey, then use the 1/3 cup + 2 tbsp + 2 tsp. The granules are in the baking section in our grocery store.
