Happy Friday! Next week starts back to school for us! College boy heads back over the weekend, and the other two will be starting mid week. The summer seems like it just flew by! I have mixed emotions about back to school this year. For one, it’s starting to hit me that my empty nest days are going to be here before I know it. I’m a little sad. I still have a few more years, but it’s starting to feel more real. I’m sure many of you have already been through it or are feeling what I am feeling now. It’s just like a knot in the back of my throat.

I was actually planning to feature crockpot recipes today until a few tomato recipes caught my eye. And the end of summer tomatoes is another thing I’m a little sad about right now. So crockpot recipes can wait for a week or so…link those recipes up this week! I even updated one of my favorite tomato recipes, Tomato, Basil and Feta Summer Salad, this week too. If you get a moment, stop by and check it out. I promise you won’t be disappointed!

Colorful, healthy, and packed with flavor, this easy Tomato, Basil and Feta Summer Salad is the perfect side dish for any summer dinner, and even makes for a wonderful light lunch as well. Go ahead and customize it by adding in cucumber or even summer corn…the basil dressing goes well with everything!
