When I’m cooking for my family, I like to use the freshest healthiest ingredients possible. But here in the Northeast, we have a short growing period, and local produce isn’t available year round. I often cook with frozen fruit and vegetables because they are such a healthy alternative.

My kids love fresh salsa, as well as all kinds of fruit, so I knew this Tropical Glazed Chicken topped with salsa would be a popular dinner. You’re going to love the delicious flavor combination here. You might even feel like you’re on an island vacation during dinner time!

But best of all, this Tropical Glazed Chicken is quick and easy…it takes less than a half hour to make (with the exception of the marinating time). Our family is always on the go, so being able to get dinner on the table fast is important to me.

As I mentioned above, I like to cook with frozen fruit. I thought I might share the reasons why. You can do so much more with it than just smoothies!

5 REASONS TO BUY FROZEN FRUIT INSTEAD OF FRESH

Better for your health

Most frozen fruits are frozen right after harvesting, at the peak of freshness. That means that they are packed with vitamins, minerals and antioxidants, and freezing “locks” in those nutrients. The longer the time period between harvest and consumption, the higher the nutrient loss. For that reason, fresh fruit that has traveled cross country probably doesn’t have the same level of nutrients. Frozen fruit is a great alternative to fresh fruit in many cases.

Great taste

Have you ever eaten an apple right off the tree? The flavor is amazing! I never liked apples until I went apple picking because I never knew what they were supposed to taste like. Frozen fruit has that same amazing flavor of freshly picked, because they’re frozen right after harvesting, when they’re at their peak, again “locking” in the flavor. Fruit that sits on a truck for a long period of time isn’t going to be quite as tasty.

Time Saver

They’ve already been washed, peeled and chopped. Need I say more? The work has already been done for you. If you’re busy (and who isn’t?), this is a big plus.

Versatility

Frozen fruits aren’t just good for smoothies or desserts.  I used the Welch’s Tropical Blend to make a savory marinade and glaze, but I also considered making a vinaigrette with the Blueberry Fusion or a sweet dip with the Antioxidant Fruit Blend. You can use frozen fruit in barbeque sauce, pancake syrup, drinks … the sky is the limit. There are so many different ways you can use frozen fruit!

Affordable

TROPICAL GLAZED CHICKEN WITH SALSA

Glaze / Marinade

You’re going to blend your Welch’s Tropical Blend, a chipotle pepper in adobo sauce along with an extra teaspoon of adobo sauce, a couple of garlic cloves, fresh ginger or ginger paste, white balsamic vinegar, light brown sugar and mango nectar in a food processor until smooth.

Set aside a couple tablespoons for your salsa and 3/4 of a cup for marinating the chicken. The rest you’ll be brushing on the chicken while you’re grilling it.

Salsa

For your salsa, you’ll combine the chopped tomatoes, peppers, avocado, red onion and cilantro with a couple tablespoons of the glaze. Squeeze the juice from half of a lime over the stop and mix well. If you have any leftover salsa, you can it eat it with chips. I had to stop my family from digging in – before dinner!

Chicken

Marinate your chicken in the Tropical Glaze for 3-4 hours.  When you’re ready to start cooking, preheat your grill to medium.  Grill your chicken for 8-12 minutes over medium heat, brushing each side with the glaze. When your chicken is done cooking, the internal temperature should be 165 degrees F.

Slice as desired, top with salsa and serve. We served it over rice, but you can serve it plain as well.

Tropical Glazed Chicken with Salsa

Tropical Glazed Chicken with Salsa

Prep Time: 15 minutes
Cook Time: 12 minutes
Total Time: 27 minutes

Ingredients

  • 4-6 chicken breasts

Tropical Glaze

  • 2 cups Welch's Frozen Fruit Tropical Blend
  • 1 chipotle pepper in adobo sauce + 1 teaspoon adobo sauce
  • 2 garlic cloves, peeled
  • 1 tablespoon fresh ginger grated or chopped, or ginger paste
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon light brown sugar
  • 1/4 cup mango nectar

Salsa

  • 2 heaping tablespoons tropical glaze
  • 2 cups tomatoes, chopped
  • 1 cup mixed peppers, chopped (I used red and orange)
  • 1 avocado, chopped
  • 1/4 cup red onion, chopped
  • 2 tablespoona cilantro, chopped
  • juice from half a lime

Instructions

Tropical Glaze

  1. Combine all ingredients in food processor and process until smooth.
  2. Set aside two tablespoons for salsa, 3/4 cup to marinate the chicken in, and save the rest to brush on the chicken while grilling.

Salsa

  1. Combine all ingredients and mix together. Set aside.

Chicken

  1. Marinate your chicken in 3/4 of the Tropical Glaze for 3-4 hours.
  2. When you're ready to cook, preheat your grill to medium.
  3. Grill your chicken 8-12 minutes over medium heat, brushing with tropical glaze on each side.
  4. Internal temperature should be 165 degrees F when chicken is cooked.
  5. Slice as desired and top with salsa.

We definitly have tropical fruits available year round in Baja and this dish has such a nice vibrant tropical flare. Sounds delicious. Tracey
