Hello to you A Dish of Daily Life readers! My name is Jennifer, and I create appetizers and tapas-portioned recipes over at TakeTwoTapas.com. Today, I am going to share one of my indulgences, or cheat foods, that I have when I am taking a day off from being “good” at watching what I eat.

My husband, Brooks, and I love to go out for burgers on Saturday afternoons.  Whether we are watching football, or cheering on the Kentucky Wildcats, we love good food, especially burgers, and all the great sides that you can get with them.  My favorite side is onion rings.

In my hometown of Jacksonville, there is a great pizza place called The Loop Pizza Grille, that also serves sandwiches and a few pasta dishes.  I love getting their meatball sub and onion rings.  The crust on their onions rings is always light, flaky, and seasoned just right.  Served alongside a creamy, peppery dipping sauce that compliments them just so is the tip of the iceberg.  I have tried and tried again to replicate that recipe, to no avail.

This past month Brooks and I have been doing a Whole30 lifestyle to get us rebooted for the New Year.  After the holiday season, we all need a reboot!  Now that it is February we have become a little less stringent and are now following an 80% paleo diet. This is basically a gluten-free diet along with some other minor adjustments.  I still eat my burgers (without the buns) but I am really missing my onion rings.  When we are enjoying our burgers and beers a few weeks ago a piece of bacon fell off my burger and the idea hit!  I could wrap those thick slices of tender onions with bacon and fry them up!  Crispy coating here I come!

Grab some bacon, I prefer the thinner cut bacon, and start wrapping your onions!  I used a toothpick to secure the ends and keeping them from peeling off when the bacon shrinks up around the onion.  A perfect onion to use is a Vidalia onion.  The balance of the smokiness of the bacon next to the sweetness of the onion is the ultimate.  Dunk them in the Chipotle dipping sauce, and you have a winning combination!

Bacon Wrapped Onion Rings

Bacon Wrapped Onion Rings

Yield: 14

These crispy bacon-wrapped onion rings are the perfect finger food for a party, as a side dish for your burger, or just an afternoon snack with friends. Dipped in chipotle sauce, they are a crowd-pleaser!

Ingredients

  • 2 large Vidalia Onions, cut across in 1/2 inch thick slices
  • 48 slices of thick sliced bacon
  • oil or frying
  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 tablespoon chipotle sauce

Instructions

  1. Wrap your bacon around your onion rings and secure with a toothpick.
  2. Add oil to your frying pan about 2 inches deep.
  3. Heat oil to 375 degrees.
  4. Fry your rings 2 at a time until the bacon is crispy and cooked through, flipping at least once (about 3 minutes).
  5. When done, place your rings on a cooling rack to drain off any extra oil.
  6. Keep warm in the oven until ready to serve.
  7. Dipping Sauce:
  8. Mix all the ingredients and keep cool in the refrigerator until ready to serve.
