On to my features…
I’ve had South of the Border recipes on my mind all week. Well, that’s not completely true. That type of food is pretty much always on my mind. Mexican, Tex-Mex, Southwestern food…I like it all. Given the choice of guacamole or brownies, I will pick guacamole 9 times out of 10. Really.
This week, I made slow roasted tomato salsa, Roasted Tomato, Corn and Shrimp Quesadillas, and Love Bakes Good Cakes’ Jalapeno Popper Chicken Taquitos. I make guacamole two or three times a week. It’s my daughter’s favorite afterschool snack. The salsa, quesadillas, and guacamole are family favorites, and everyone loved the taquitos so much that I’m going to be trying some other variations.
So, it’s no wonder I kept coming back to the recipes with a South of the Border flair. Here’s a few of my favorites:
Pepper Jack Cheese Sticks, from Food and Happiness
Rosemary, Chipotle, Raspberry, Balsamic Chicken, from The Kitchen Chopper
Jalapeno Popper Chicken Taquitos, from Love Bakes Good Cakes
Shredded Chicken Baked Taquitos, from Culinary Ginger
Can you tell I’m a little obsessed with taquitos right now?!
