I’m not the only cook in this house.

My husband actually cooks quite a bit as well, and he is most definitely the grill master here.

He’s been hard at work this summer creating an outdoor kitchen in our pool area. I admit to being skeptical about the project. It entails a built in grill, refrigerator and sink, as well as pavers for the patio flooring which border the stamped concrete that surrounds our pool. The stamped concrete has rounded edges, so this is no easy task. Each paver touching the edge of the stamped concrete has to be cut to match up exactly. Here’s a sneak peak of the project…I’ll be sharing more when it’s completely finished.

CELEBRATING EXTRAORDINARY PEOPLE AND 100 YEARS WITH NEW ENGLAND COFFEE

When my husband decides to do something, he’s “all in.”

He’s volunteered for several boards over the years within our community. He’s currently the President of the board of our community Culinary School, and he spent many years on our town soccer board.

I met him in college…we ran cross country and track together.  His determination and work ethic was second to none. He still runs and competes in Masters races, but his focus now is actually coaching.  This year he coached several girls at our high school to conference and state championships and four girls qualified for Nationals as well.

I tell you this because I consider him to be extraordinary, not simply because I fell in love with him so many years ago, or because he is the father of my children, but because he lives his life in an extraordinary fashion and I want to celebrate that.

Today we’re celebrating something else as well though!

GRILLED PORK TENDERLOINS WITH COFFEE CHILI RUB

I often like to have a cup of coffee mid afternoon as a pick-me-up.  Sometimes it helps me to kick start my afternoon when I’m busy; other times it’s an enjoyable treat as I get dinner started. Coffee is quite versatile…I love the flavor in everything from desserts to main dishes.

Today I have a real treat for you!

I combined New England Coffee Centennial Reserve with chili powder, brown sugar, onion and garlic powder, cumin, paprika, salt and pepper to create a fabulous dry rub for these grilled pork tenderloins.

The rub creates a delicious “crust” that locks in the flavor of meat during grilling, keeping it tender and juicy.

To get your pork tenderloins ready for the grill, rub a little olive oil on them so the dry rub will stick.
 
Then take the dry rub and rub it into your pork tenderloins and allowed them to sit for a hour.
 
Preheat your grill to medium high heat. Grilled pork tenderloins take about 20 minutes. Make sure to keep the lid of your grill down while cooking, and don’t forget to flip your meat half way through. They’re done when the internal temperature reaches 145 degrees F.
 
Tent your tenderloins with foil, and let them rest for about 5-10 minutes before serving.

Ingredients

Coffee Chili Rub

  • 1/4 cup New England Coffee Centennial Reserve
  • 1/4 cup chili powder
  • 2 tablespoons brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon cumin
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Grilled Pork Tenderloins

  • Pork Tenderloins
  • olive oil for rubbing into meat

Instructions

Coffee Chili Rub

  1. Combine all spices and mix well.

Grilled Pork Tenderloins

  1. Rub pork tenderloins with a little bit of olive oil to make sure the coffee chili rub sticks.
  2. Rub tenderloins with dry rub, and refrigerate for about an hour.
  3. Preheat grill to medium high heat.
  4. Cook pork tenderloins for about 20 minutes. Flip meat halfway though. Meat will be done when internal temperature reaches 145 degrees F.
  5. Tent with foil and allow the tenderloins to rest for 5-10 minutes before serving.

Notes

*The Coffee Chili Rub recipe will yield enough for about 7 lbs of meat. Store your extra rub mixture in cool dry place in container with air tight lid.

**I've included the "rest" time with the cooking time.
