These last few weeks have been hectic for us. We used to try to cook ahead for the week on Sundays, but we’ve had out of town and late Sunday games that have been throwing our schedule out of whack. It’s been a struggle to get dinner on the table lately.

This is a super easy meal that takes almost no time to put together! You just have to remember to marinate your chicken overnight first.

Chicken Caesar Grinders {Quick and Easy Meals}

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

Ingredients

  • 1.25 - 1.5 lb package of chicken tenderlions
  • grinder rolls
  • chopped romaine lettuce
  • shredded parmesan cheese (for garnish, if you'd like)
  • caesar salad dressing

Instructions

  1. Marinate the chicken tenders overnight in the caesar dressing. You don't need all of it...hold some aside for dressing on the sandwich.
  2. Bake chicken until cooked all the way through. (I actually cooked mine on the stovetop first, then finished by baking, but you could do it either way)
  3. Add chopped romaine and cut up chicken pieces to grinder roll, drizzle with some of the extra dressing.

Chicken caesar salads used to be my JAMMMMMMM back when I could have dairy. Man, they're so flipping good! I especially love the anchovies!!!!

I like anchovies too! This dressing is a no anchovy one though...I'm the only one in our family that likes them!
