Menu Monday, 11/12/12

New week, new menu!  Here’s what we’re having this week!

Monday: Marinated Steaks, beets, oven roasted potatoes

Its supposed to be nice tomorrow night, and we have no sports, so we decided to take advantage of the opportunity to grill!

Tuesday: Chile Verde from the Valley of the Sun and Green Salad

I’ll be adapting this recipe to the crockpot, because its a soccer night.  When I’ve made this in the past, I like to serve it over rice.  It tastes great the next day as well!

Wednesday: Chicken Burritos

This is another one of our old standby meals.  I open a can or two of black beans, and pan fry them with garlic, onions, peppers, and carrots, shred a rotisserie chicken, and stuff the flour tortillas with chicken, beans, rice or pan fried potatoes, and cheese.  We top them with salsa, cheese and sour cream for a delicious but easy to put together meal!

Thursday: Orange Glazed Chicken Thighs, mashed potatoes, sauteed broccolini

You’ll see that the recipe is actually for chicken wings, but I am going to make this with chicken thighs instead.

Friday: Butternut Squash Soup, Tortellini with Pesto, steamed broccoli

This Butternut Squash Soup recipe is a family favorite…my mother in law makes it frequently.  I think she does make some adaptations which I will ask her about and let you know as well.  Our pesto recipe, as you’ve heard before, comes from the Silver Palette cookbook.  We do sometimes substitute different types of nuts.

Planning for the week over the weekend really does make life easier!  By taking a look at what we have in the house, I’m able to be more proactive about using up what we have in the house and save money at the grocery store!  What are your best strategies for getting nutritious dinners on the table on weeknights?
