Mom! What’s For Dinner?

I’ve had a few weeks off from my menu postings…and I’ve been flying by the seat of my pants. I’ve forgotten things, I’ve made some interesting meals, and it’s been a much more hectic dinnertime. I’ve had a hard time getting back into a routine. With our schedule, it’s a lot easier when I plan our menus ahead! But I’m back on track this week!

Monday: Take-out.  Not the best way to start the week, I know!  But not everyone is going to be home and I have a busy schedule on Monday, so…take-out it is.

Tuesday: For some reason I have been craving Tortellini Soup, so tonight when I was checking out recipes on Pinterest and came across this recipe for Tomato Tortelli Soup from The Kitchen Life of a Navy Wife, I decided we would give it a try! It looks delicious! I’ll make a salad to go with it too.

 

Wednesday: My kids don’t always ever like slow cooker recipes but I am determined to find some that pass the test! I love the slow cooker…how great is it to just throw something in and let it cook all day and not have to rush around at dinnertime?! Someday I am sure that they too will appreciate the slow cooker! I’m very excited to try these Slow Cooker Chili Chicken Tacos from Martha Stewart!  Not sure which vegetable I’ll make for tonight…we’ll see what looks good at the grocery store…it’s this time of year I really miss the farm!

 

Thursday: Quesadillas – I’m going to wing this one…I’ll let you know what I come up with!  Maybe we’ll have some leftovers from Wednesday night that I can throw in.  I’m going to try to add our veggies to the quesadillas as well.

Friday: I’m trying out this absolutely scrumptious looking recipe from What’s Cooking With Ruthie, Spinach & Artichoke Alfredo Chicken. I can’t imagine this one won’t be a hit, because my daughter is constantly making her own alfredo sauce for us, and everyone likes spinach and artichokes. I might omit the mushrooms because there’s some strong feelings about mushrooms going on in our household. Two of us enjoy eating them, three of us can’t stand them. (In case you’re wondering, I’m on the enjoy side). Green beans might be nice with this.

 

We’ve got a packed sports weekend, so I’m sure we’ll be winging it then too. But it feels good to have a menu plan ahead of time for the week again!  Until next time…
