White Chocolate Cranberry Pecan Fudge…the perfect treat to have on hand for Christmas holiday entertaining or gift giving! You are going to absolutely LOVE the flavor the spice mixture gives this fudge! And, it’s very easy to make as well!
I am a little obsessed with fudge right now.
It’s hard not to be when I keep seeing all these delicious fudge recipes! The holidays and fudge go hand in hand. It’s such a delicious treat to have on hand for holiday entertaining…and it’s the perfect addition to the dessert table!
Or to snack on while you’re working…that is one of the wonderful perks of being a food blogger!
Of course, fudge also makes a wonderful gift. I always love getting homemade food gifts…it feels like they really come from the heart.
I’ve been wanting to try my hand at fudge making for eons. Years ago, my husband and I used to vacation at Martha’s Vineyard (my in-laws had a house there, once up a time). There was this great little fudge shop, Murdick’s, that had the best fudge. Whenever we were there, I brought home fudge. There were so many great flavors, and everyone in our house had a different favorite.
If we’re really being honest here, I had a couple favorites. It’s hard to have just one favorite when it goes to fudge, isn’t it? One of my favorites was a cranberry fudge though. It was different from this one…I don’t remember it having nuts, and I believe they used fresh cranberries, not dried.
WHITE CHOCOLATE CRANBERRY PECAN FUDGE
If you’ve never made fudge before, rest assured it is very easy. This White Chocolate Cranberry Pecan Fudge might be the easiest dessert you’ve ever made!
Believe me, if I say it’s easy, it’s easy. I’m not a dessert maker. I find desserts daunting, and I don’t make a lot of them. I usually leave dessert to my husband and daughter. They’re both much better at it than me. My husband used to make the kids’ birthday cakes…I kid you not. Once he even made a rice krispie treat castle for a pirate party! And you should see the cupcake creations my daughter makes with her younger cousins…we’re talking lions, pandas, all sorts of cute stuff. That is not my forte.
But I can make fudge. The only creativity needed is playing around with the flavors. That I can handle.
Speaking of which, you are going to love the flavors in this White Chocolate Cranberry Pecan Fudge. The spices give this fudge recipe another dimension! It got rave reviews here, and I think you are going to love it as well. Even the few people who said “white chocolate wasn’t their favorite” were eating multiple pieces. To me that says SUCCESS!
So let’s get started.
For this White Chocolate Cranberry Fudge, you don’t even need a stovetop…you can do all of your melting in the microwave. No candy thermometer necessary.
I told you it was easy.
You’re going to line a 9 x 13 glass baking dish with parchment paper.
Then place the white chocolate chips, sweetened condensed milk, and butter in microwaveable bowl. I used a large glass measuring cup because it has an easy pouring spout.
Microwave on medium until chips are melted, about 3-4 minutes. You will need to stop and stir the mixture a couple times during cooking.
As soon as you take the mixture out of the microwave, stir in the spices, vanilla, cranberries and nuts and mix well.
Then pour the chocolate mixture into your glass baking dish. Now comes the hard part. You have to refrigerate it for about 3 hours or until it is completely set before you can cut it into squares and eat it.
The prep work will take you 5-10 minutes. Even if you aren’t good at dessert like me, I guarantee you can pull this one off.
Don’t you wish you had a square?!
