If you’ve been reading my blog, you know that baking is not really my thing…until we start to approach the holidays! Then a lot more baked goods start to appear on the blog. When you taste this Blueberry Banana Streusel Eggnog Bread, you’ll understand why! It’s such a yummy treat!
I used Hood® Vanilla Eggnog for this Blueberry Banana Streusel Eggnog Bread. I’m a huge fan of Hood products. HOW TO MAKE BLUEBERRY BANANA STREUSEL EGGNOG BREAD
Preheat the oven to 350 degrees. Spray your bread pan with cooking spray and dust with flour.
Make the streusel topping. Combine the flour, brown sugar, cinnamon and nutmeg; then add the butter. Mix together with your hands until it looks like coarse crumbs, and then set aside.
Using a stand mixer, beat the eggs. Then add the sugar, Hood Vanilla Eggnog, vegetable oil, mashed banana, and vanilla. Continue to beat on medium to combine.
Mix together the flour, baking powder, cinnamon and nutmeg in a separate bowl. Add to the above mixture and stir with a spoon until moist.
If you want to avoid that blue batter that you often get with frozen blueberries, here’s a helpful hint. Leave your blueberries in the freezer until you’re ready to add them. Then add a tablespoon or two of flour to coat them before adding them to the batter. Don’t over mix! Once you see the beginnings of blue streaks, stop mixing.
Add the batter to your loaf pan, then top with the streusel topping.
Eggnog bread smells so good while it’s baking!
Bake for 45-50 minutes or until the bread is golden brown and a toothpick can be inserted cleanly. Cool before removing from pan.
While your Blueberry Banana Streusel Eggnog Bread is baking, make your eggnog glaze.
For the glaze, mix together powdered sugar, Hood Vanilla Eggnog, vanilla, and ground nutmeg using a stand mixer. If you would like to thin the glaze, add extra eggnog a little at a time.
Personally, I like my glaze a little thicker.
Spoon glaze over the top of the bread, allowing glaze to drip down the sides.

Blueberry Banana Streusel Eggnog Bread
Ingredients
Blueberry Banana Streusel Eggnog Bread
- 2 eggs
- 1 cup sugar
- 1 cup Hood Vanilla Eggnog
- 1/4 cup vegetable oil
- 1/4 cup mashed banana (1 banana)
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 1/2 cups frozen blueberries
Streusel topping
- 1/2 cup flour
- 1/2 cup brown sugar
- 3/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 5 tablespoons unsalted butter
Vanilla Eggnog Glaze
- 1 cup powdered sugar
- 5 tablespoons Hood Vanilla Eggnog
- 1/2 teaspoon vanilla
- 1/8 teaspoon nutmeg
Instructions

Bake for 45-50 minutes or until the bread is golden brown and a toothpick can be inserted cleanly. Cool before removing from pan.
