  • Cucumber: Finely chop. No need to peel if you’re using an English cucumber or ones with thin skin.

  • Capers: Rinse, chop, and add.
  • Garlic: Minced. No giant bites of garlic allowed!
  • Italian Flat Leaf Parsley & Fresh CilantroFinely chopped. So fresh tasting!

Pro tips: 

  • Use a sharp knife and a cutting board for finely chopped ingredients.
  • If you use a food processor, careful not to chop too much!
  • If you prefer more heat, keep the jalapeno pepper seeds in the salsa. Careful! It’s spicy!

In fact, doing so can allow the flavors to blend together better.

Which means you get an even tastier salsa! 

Just be sure to store it properly in the refrigerator.

And if you’re making it to share, I recommend not making it more than 24 hours in advance.

It’s still edible after that, but that first day is really the sweet spot.

How Long Does Cucumber Pico de Gallo Last?

Fresh cucumber pico verde will stay fresh in an airtight container in the refrigerator for 2-3 days. 

After that, it might start to lose some of its crispness and flavor. 

Though I don’t think you’ll have any trouble eating it up in that time frame! It’s so good!

The best way to store fresh cucumber salsa is in an airtight container in the refrigerator.

Definitely don’t store it on the counter. It will go bad really quickly if you do.

It’s seriously the perfect combo with this salsa.

I’m also a fan of serving it with Flank Steak Balsamic Marinade and Sheet Pan Steak Fajitas!
