Here’s the simple ingredients you’ll need. And they’re all fresh too!

  • Jalapeño: Remove the ribs and seeds, then mince for a hint of spice without too much heat.
  • Cucumber: Finely chop. No need to peel if you’re using an English cucumber or ones with thin skin.
  • Lime Juice: Freshly squeezed for that zesty tang.
  • Capers: Rinse, chop, and add.
  • Garlic: Minced. No giant bites of garlic allowed!
  • Italian Flat Leaf Parsley & Fresh CilantroFinely chopped. So fresh tasting!

Pro tips: 

  • Use a sharp knife and a cutting board for finely chopped ingredients.
  • If you use a food processor, careful not to chop too much!
  • If you prefer more heat, keep the jalapeno pepper seeds in the salsa. Careful! It’s spicy!

Can You Make Cucumber Pico de Gallo Ahead of Time?

You can certainly prepare this simple cucumber pico ahead of time! 

In fact, doing so can allow the flavors to blend together better.

Which means you get an even tastier salsa! 

Just be sure to store it properly in the refrigerator.

And if you’re making it to share, I recommend not making it more than 24 hours in advance.

It’s still edible after that, but that first day is really the sweet spot.

How Long Does Cucumber Pico de Gallo Last?

Fresh cucumber pico verde will stay fresh in an airtight container in the refrigerator for 2-3 days. 

After that, it might start to lose some of its crispness and flavor. 

Though I don’t think you’ll have any trouble eating it up in that time frame! It’s so good!

How to Store Cucumber Pico de Gallo?

The best way to store fresh cucumber salsa is in an airtight container in the refrigerator. 

This helps to keep it fresh and delicious for up to 2-3 days. 

Make sure it’s sealed tightly to avoid any unnecessary exposure to air or moisture.

Definitely don’t store it on the counter. It will go bad really quickly if you do.

And if you’re bringing it to a BBQ or party, just keep it in the fridge or cooler until you’re ready to eat.

Then put it away as soon as everyone has dished up.

That way you’ll keep it fresh. And you really don’t want to have a risk of foodborne illness.

That would really ruin your summer months!

But one of my all-time favorites is to pair it with flank steak tacos

It’s seriously the perfect combo with this salsa.

I’m also a fan of serving it with Flank Steak Balsamic Marinade and Sheet Pan Steak Fajitas!
