These next few weeks we’ve got a lot going on. My Menu Mondays may have fewer recipes, and I may even be skipping a week over the holidays. For next week, I know we have a holiday party to attend, as well as one night we’re going to do leftovers. Last week there was a recipe I really wanted to try and our schedule changed, so I didn’t get to make it…so I am putting it back on the menu this week. The Chunky Shrimp Bisque, Spaghetti Casserole, and Baked Mac and Cheese were all winners…I’d definitely make them again. Actually I think I’ve made variations of the Chunky Shrimp Bisque three times since the start of the school year…the kids all love that one! See last week’s Menu Monday for the recipes.
Monday: Cavatelli with Sausage, Broccoli, and Garlic sauteed in olive oil
One of my favorite dinners out is Cavatelli with Broccoli Rabe and Sausage at Italia Mia in New Milford. I’m planning to duplicate that dinner with broccoli, because the kids don’t like broccoli rabe. It’s a pretty easy dinner to put together…steam the broccoli for a few minutes, saute the sausage and garlic, add in the broccoli for the last couple minutes and mix with the pasta.
Tuesday: Leftovers
Wednesday: Herb-Rubbed Grilled Pork Tenderloin from the Deen Bros, Green Salad, sauteed baby zucchini
Friday: Five Veggie, Four-Cheese Lasagna from the Deen Bros
I’ll probably omit the mushrooms because only 2 of the 5 of us like them, myself and my youngest son.
