Using Up What’s in the House {Menu Tuesday}

I’m a little late on the menu planning this week.  Menu Monday sounds so much better than Menu Tuesday, doesn’t it?! Oh well…better to plan my menu now than not at all! With Martin Luther King Day yesterday, we winged it for dinner and made a pasta with ingredients that were already in the fridge.  So now for the rest of the week, I am going to try to do the same…my goal is to use up what we have in the house to make our dinners! I thought it would be a challenge, but it looks like with the recipes I chose, I can get by with only making a small shopping trip this week! I’ll still have to get food for the kids’ lunches, snacks, and fruit, but I’m hoping to keep the grocery bill down!  I’ll let you know how I do!

Tuesday: Lemon Chicken Tortellini Soup from Rachael Ray Magazine

I’m going to substitute spinach, because I already have it in the house. The only things I’ll have to buy are chicken and the fresh mint!

 

 

Wednesday: Not Your Mother’s Mac & Cheese from Iowa Girl Eats, side salad, and roasted brussel sprouts

I love homemade Mac & Cheese!  Doesn’t this look yummy?! My cousin Rachel of Studio Cuisine (if you’re looking for recipe inspiration, I highly recommend her blog!) turned me on to this recipe, so I am really looking forward to trying it. I’ll have to pick up panko bread crumbs and colby cheese, and of course the veggies, but I’ve got everything else!

 

 

Thursday: Pork Chile Verde from Heather Christo Cooks and Steamed Broccoli

Doesn’t this look delicious?! I can’t wait to try it! And best of all, I have every single ingredient!

 

 

Friday: Leftovers

The challenge for me is going to be sticking to my grocery list! If I can do it, or at least stay reasonably close to the items on my list, I think I’ll be pretty happy with my bill this week!
