Can I tell you how sad I am?
I love being able to buy local produce and support our local farms. It’s one of the highlights of my Saturday mornings.
One of the farm stands always has homemade foods in addition to their veggies…things like pickles, salads, chilis, soups, and hummus. Sometimes I grab something when I am in a rush that day heading off to some sporting event and want something healthy; other times, I just see something I want to try.
It was this particular farm stand where I got the idea for this curried green onion hummus. My family loves hummus. My husband is half Lebanese, so the kids have all grown up with it, and it’s actually one of those things that is in our refrigerator most of the time. My daughter brings it every day for lunch.
Hummus is really easy to make too. If you can use a cuisinart or a blender, you can make hummus.
Quite honestly I couldn’t even tell you if this is a close duplication to theirs, but my family liked it.
- 1 small clove of garlic, smashed
- 1 cup chickpeas, rinsed
- 1/4 cup green onions, chopped
- 1 tablespoon tahini
- Juice from one lemon
- 2 tablespoons water
- 1/4 teaspoon curry powder
- salt to taste
- Parsley for garnish (optional)
- In a cuisinart or blender, combine all ingredients, and process until smooth.
- Add salt to taste.
- Garnish with parsley, if you'd like.
