- 2 Tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon nutmeg (pinch)
- 1/4 cup red onion, diced
- 1/3 cup thinly sliced chorizo
- 1/3 cup gorgonzola crumbles.
Pizza Crust
Instructions
- Preheat oven to 375*F
- Cut acorn squash in half.
- Remove seeds.
- Rub inside and edges with olive oil. Sprinkle it with salt, pepper and ground nutmeg.
- Place each half, skin side down on a baking tray and roast for approximately 45 minutes, until the flesh is tender and pierced easily with a fork. Let cool.
- While squash is cooking, cut chorizo into rounds and then each round into quarters (baby triangles). the thinner you slice your chorizo the crispier it will ben when cooked. Set aside.
- Prepare Crust. Add chickpea flour, water, olive oil, sea salt and rosemary leaves to a bowl. Whisk well and removing any lumps.
- Cover and let crust sit for about 20 minutes.
- After squash has finished cooking and is cool enough to handle, remove skin and dice the flesh. You'll use about 1 1/2 cups of the roasted squash, depending on your preference.
When everything is prepped, Make the Pizza.
- Fire up your broiler and pre-heat an 11-inch oven-proof skillet under it for about 10 minutes.
- Remove the skillet, using oven proof mittens!, and coat the bottom with about 2 tablespoons of olive oil.
- Pour batter in skillet and swirl to evenly distribute around the pan.
- Place under the broiler for about 2 minutes, keeping a close eye on it. The crust should be mostly set and starting to brown at the edges. Olive oil around the edges should be bubbling away.
- Remove skillet, with mittens!, and add toppings of squash, onions, chorizo and cheese.
- Replace under broiler for another 3 to 5 minutes until the edges are very crispy and a spatula inserted under the crust meets no resistance.
- Serve immediately.
