Apple Pie Thumbprint Cookies

Yield: 2 dozen cookies
Prep Time: 10 minutes
Cook Time: 15 minutes
Additional Time: 10 minutes
Total Time: 35 minutes

Apple Pie Thumbprints bring everything you love about classic apple pie into a soft, buttery cookie. Cozy, spiced, and totally irresistible!

Instructions

  1. Preheat oven to 325*F. 
  2. With a stand mixer, beat together butter until fluffy, about 2 minutes. Add vanilla and beat for another half a minute. 
  3. Add in flour and confectioners sugar and beat on medium speed until a dough begins to form.
  4. Create a large ball of dough using your hands. 
  5. Roll dough into 1.5 - 2 inch balls and place on baking sheets lined with parchment paper.
  6. Make a thumbprint in the middle of each ball. 
  7. Place apple pie filling into each thumbprint. If the apple chunks are too big, dice the apples first.
  8. Bake 12-15 minutes. Cool for a few minutes on the baking sheet, then transfer to a wire rack to cool completely. 
  9. Once cookies have cooled, melt white chocolate chips in microwave. Start with 30 seconds, stir, then continue with 15 second increments in the microwave until chocolate is fully melted. Spoon chocolate into a plastic bag,  seal,  then cut a small hole in the corner. Drizzle white chocolate over the cookies.
  10. Allow chocolate to set before serving.
