Have I told you lately how much I love Mexican food?!

I’m sure you haven’t figured it out with all the Mexican recipes I post. LOL You probably guessed fajitas were coming based on yesterday’s fajita seasoning recipe!

My recipe today has been adapted from Lisa’s Dinnertime Dish’s Sheet Pan Chicken Fajita Bowls.

I enjoy it because it’s a fun way to find new recipes to try, and get to know your online friends better as well.

I actually have met Lisa in real life though, at a blog conference. She is just as genuine in real life as she is on her blog. She focuses on affordable, healthy meals, that really appeals to me when I am feeding my family.

I love looking through Lisa’s blog because she has such pretty pictures, and everything looks so delicious!

Believe it or not, with all those pretty pictures, I did not have a hard time choosing a recipe from her blog to make for Freaky Friday! I did find a number of other recipes I’d like to try, like these Pork Potstickers with Sesame Soy Dipping Sauce or this Easy Vegetable Miso Ramen. But I was in the mood for Mexican when I was choosing a recipe!

SHEET PAN FAJITAS

Lisa uses a slightly different spice mixture than my fajita seasoning mix, but I am one of those people who likes to make my own spice mixes, and I didn’t have the type of seasoning blend she used in her recipe. So I went ahead and used my own fajita seasoning recipe for these sheet pan fajitas. And since that recipe has never been posted here on the blog, I shared it with you yesterday. It is super easy to make, and way better than the packets you buy at the grocery store (if I don’t say so myself)!

Mix your fajita seasoning with some olive oil and a little lime juice. Then let that sit while you cut your chicken, red pepper and onion into thin slices. I usually just leave my onions as rings.

Marinate your chicken for an hour or so in the marinade. I like to save a couple tablespoons of the marinade because I don’t add in my vegetables until right before I’m ready to cook, and I use that extra marinade to coat the veggies.

When you’re ready to cook your meat and vegetables, preheat your oven to 425 degrees. While the oven is preheating, I add my vegetables to the mixture as well as the extra marinade that I reserved.

If you don’t feel like marinating or don’t have the time, then just make sure the chicken and vegetables are well coated with the fajita seasoning and olive oil mixture.

Spread the chicken and vegetables out on a pan that has been covered in foil (easier for clean up), then roast in your oven for 25-30 minutes until the chicken is cooked!

CILANTRO LIME RICE WITH BLACK BEANS

While your chicken is cooking is a good time to make your rice. I usually use white long grain rice when I make my cilantro lime rice, but Lisa used basmati so I decided to try it. It was delicious! Basmati rice has a slightly nutty flavor, and I have to say I really liked it with these chicken fajita bowls so I’ll be swapping it out again. The other thing I usually do is add black beans to my rice when I make it for Mexican bowls.

To make your Cilantro Lime Rice, bring your rice and water to a boil, then reduce the heat to a simmer, cover and continue cooking for 15 minutes. Then turn your heat off, and let your rice sit for 5 more minutes. Mix in your lime juice, chopped cilantro and black beans.

Now you’re ready to build your Chicken Fajita Bowls.

CHICKEN FAJITA BOWLS

Time to load up the Chicken Fajita Bowls! Add the cilantro lime rice to the bottom of the bowl, then add the chicken, onions and peppers, shredded cheese, chopped lettuce, sliced avocado, as well as a dollop of sour cream and another one of guacamole. If it had been summer, I would have also added sliced cherry tomatoes and fresh corn cut right off the cob.

These easy Chicken Fajita Bowls, made with Sheet Pan Fajitas, are a delicious and healthy meal that the whole family will love!

Ingredients

Sheet Pan Chicken Fajitas

  • 2 tablespoons Fajita Seasoning
  • 1/3 cup olive oil
  • 1 tablespoon lime juice (juice from 1/2 of a lime)
  • 1.5 lb chicken breast, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 medium red onion, sliced thin

Cilantro lime rice with black beans

  • 1 cup basmati or long grain white rice
  • 2 cups water
  • 1 tablespoon lime juice (juice from 1/2 of a lime)
  • 3 tablespoons cilantro, chopped
  • 1 15.5 oz can black beans, drained and rinsed

Chicken Fajita Bowls

  • Cilantro lime rice with black beans
  • Chicken fajita mixture
  • shredded lettuce
  • shredded cheese
  • sliced avocado
  • sour cream
  • guacamole

Instructions

  1. Mix fajita seasoning with olive oil and lime juice.
  2. Cut your chicken, red pepper and onion into thin slices.
  3. Marinate your chicken for an hour.
  4. Preheat your oven to 425 degrees.
  5. While the oven is preheating, add vegetables to the mixture as well as the extra marinade.

I love this idea! I always do my fajita fillings on the stove top and this would be SO much easier. Plus the rice bowl is a fun twist. I'll have to try this recipe soon!
