Simple Spinach and Strawberry Salad
Hello friends! Tania from Cooktoria here, sharing this spring-inspired salad.
When I mentioned in the description above that the Strawberry Dressing is the best in the world, I wasn’t kidding. It is wonderfully rich and smooth and it tastes so good on this Simple Spinach and Strawberry Salad. I assure you, it is impossible to stop eating it.
It is finally warm outside, and summer is on its way!
I am all about quick and healthy recipes that save time in the kitchen and help me lose my last 5 pounds before the summer. Yes, I’ve been working out and eating healthy, so I can finally say “Goodbye!” to my winter weight.

This salad is super versatile: it can serve as a quick and light lunch, or you can add some grilled chicken and feta cheese to make a filling dinner.
Now that I’ve convinced you to try it, let’s start cooking! We’ll start with the dressing.
To make this awesomeness you’ll need a few fresh strawberries, some canola oil (grapeseed or peanut oil are great alternatives), honey and white wine vinegar.
I’ve recently purchased some Grapeseed Oil from Amazon, and I use it in almost all my salad dressings. It has a very nice mild flavor and a lot of health benefits.
I like the simplest version of this salad which includes fresh baby spinach leaves, strawberries, poppy seeds and a few pine nuts. The flavors work great together and the creamy dressing on the crispy spinach leaves is all I am looking for.
However, you are welcome to add some walnuts, pecans, raisins, blueberries, raspberries, goat/feta cheese, apples or whatever else you wish. In any case, you’ll be happy with the result.

Simple Spinach and Strawberry Salad

Colorful and healthy, this Simple Spinach and Strawberry Salad makes a great lunch and can be easily customized. The strawberry dressing is the best in the world!
Ingredients
For the dressing:
- 1/3 cup canola oil
- 4 chopped strawberries
- 2 tbsp honey
- 2 tbsp white wine vinegar
For the salad:
- 4 handfuls fresh baby spinach
- 6 chopped strawberries
- 1/4 cup pine nuts
- 1 tbsp poppy seeds
Instructions
- Blend all the ingredients together in a mini hand chopper or food processor until smooth.
- Arrange the spinach on the plates. Place the strawberries on top.
- Sprinkle the salad with the dressing.
- Garnish with pine nuts and poppy seeds.

I would eat it quickly. Spinach with dressing on it won't hold up too long in the refrigerator. I usually prefer to make my salads fresh.

There's something SO refreshing about a strawberry/spinach salad combo! I like adding fresh, edible flowers to mine for an extra pop of color. So good!
