These parmesan roasted chickpeas are one of my favorite recipes to keep on hand. 

With simple ingredients and vibrant flavors, they are magic that comes out of my kitchen. And the best part is, they are ready to eat in just 20 minutes.

With only 5 simple steps that include opening a can of precooked beans and draining it, whether you are a new home cook or an experienced chef, anyone can make this dish and enjoy it.

  • Can of Chickpeas: cans of chickpeas are so easy to use, they make the base for this healthy snack.
  • Olive Oil: used to sauté the crispy chickpeas to a perfect golden brown roast.
  • Parmesan Cheese: adds a rich, savory flavor.
  • Garlic Powder: adds a hint of garlic goodness to the flavor of the garlic parmesan chickpeas
  • Grated Lemon Rind: fresh lemon zest adds a bright citrus twist.
  • Dried Oregano: brings a quiet herbal note.
  • Kosher Salt: brings out the other flavors and balances the taste.
  • Freshly Ground Pepper: rounds out the seasoning with a touch of warmth.

How to Make Parmesan Roasted Chickpeas:

  1. Drain and pat dry chickpeas between layers of paper towels.

Crispy Parmesan Chickpeas

Cook Time: 17 minutes
Total Time: 20 minutes

These crispy Parmesan Roasted Chickpeas are quick, easy, and irresistibly healthy – the perfect snack for any occasion.

Instructions

  1. Drain and rinse chickpeas; pat dry with a paper towel.
  2. Heat oil in nonstick skillet over medium high heat.
  3. Add chickpeas to pan; cook 17 minutes or until golden brown and crispy all over, stirring occasionally.
  4. Transfer chickpeas to a bowl. Add cheese, garlic powder, lemon rind, oregano and salt and pepper; toss gently.
  5. Serve immediately, or cool chickpea mixture in a single layer on a parchment paper lined baking sheet before storing in an airtight container.
