Here’s how to make them:

  1. Slice potatoes thinly.
  2. Melt butter in a saucepan and cook onions until translucent.
  3. Add garlic, thyme, and rosemary, dijon mustard and heavy cream
  4. Stack potato slices in muffin pan, layering with cream sauce and cheese.
  5. Bake and garnish.

Pro Tip: Let the stacks cool in the muffin tin for 5-10 minutes before removing to help them hold their shape.

And careful in the microwave! You don’t want them exploding all over!

Just reheat them a bit. They don’t need to be recooked! Just warmed through.

Yes, you can freeze Au Gratin Potato Stacks.

Place them in a single layer on a baking sheet and freeze until solid.

Transfer to a freezer-safe container or bag and freeze for up to a month.

This is actually a secret to freezing anything!

If you freeze it in a single layer, then it won’t stick together in the freezer.

That way you can just pull out one stack if you just want your own little snack.

Or you can pull out a bunch of them for a big meal.

Do this before a holiday! It’s the best secret!

Cook up as much as you can and then freeze it until you need it!

Yes, you can make these cheesy potatoes ahead of time.

Assemble the stacks and cover them tightly with foil.

Store in the fridge for up to 24 hours before baking.

Bake as directed, adding a few extra minutes if needed.

This is also great for doing before the holiday!

Just be sure you’ll have an available oven when you need it.

Is Au Gratin Potato Stacks Healthy?

For a lighter version, you can use sweet potatoes and a lighter cream or milk.

But I haven’t tried making any swaps myself so I can’t promise they’ll still be as great.

Au Gratin Potato Stacks

Yield: 6 Servings
Prep Time: 25 minutes
Cook Time: 45 minutes

These Au Gratin Potato Stacks are a cheesy, delicious side dish made with thinly sliced potatoes, cream, and a mix of cheeses. Very Tasty!

Instructions

  1. Preheat oven to 375*F and grease a 12 cup muffin tin with butter or cooking spray.
  2. Slice 1 1/2 pounds of potatoes thinly (about an 1/8”) using a Mandolin or an attachment with your food processor.
  3. Melt 2 Tablespoons butter in a saucepan over medium high heat.
  4. Add 1/2 cup diced onions and cook until they start to turn translucent, about 5 minutes or so. Then add 2 cloves garlic. Cook an additional 2 minutes.
  5. Add 1/2 cup heavy cream, 1 teaspoon Dijon mustard, 1 teaspoon fresh thyme leaves and 1 teaspoon chopped rosemary. Once heated through, remove from heat and set aside.
  6. Stack 4 potato slices in each muffin tin opening.
  7. Top with ½ - 1 teaspoon teaspoon of the cream sauce and a little cheese. Repeat the process.
  8. Cover with tin foil and cook for 30 minutes; then remove foil and cook for 10-15 more minutes uncovered.
  9. Allow to cool in muffin tin for 5-10 minutes before removing. Drain on paper towels if necessary. Garnish with fresh thyme if desired.
