Farro Sweet Potato Salad
This Farro Sweet Potato Salad bowl has the perfect amount of spice. With its tangy and smoky flavors, it is a dish you will love!
Ingredients
Roasted Sweet Potatoes
- 2 medium sweet potatoes, peeled and cut into 1/4 inch cubes
- 1-2 Tablespoons olive oil
- 1/2 Tablespoon ground chipotle powder
Farro Salad
Instructions
- For the Sweet Potatoes
- Preheat oven to 425*F.
- Spread diced sweet potatoes in a single layer on a lined baking sheet.
- Drizzle with enough olive oil to coat. Sprinkle with chipotle powder. Then, using your hands, mix it all around on the sheet until all the potatoes are evenly coated with the oil and chipotle.
- Roast for approximately 20 minutes. This is the reason I dice the sweet potatoes so small. They roast quicker. Ovens vary so keep an eye that they don't burn.
- Once sweet potatoes are cooked and fork tender, remove from oven.
- Layer all ingredients in individual portion bowls
- Serve dressing on the side.
